The old saying...

"If at first you don't succeed, try again" says the old adage.

That is unless you're pregnant, still craving lemons and no longer in the mood to experiment recipes that require blanching lemon rinds.

IN THAT CASE, you go with a more "sure bet"....in this case, in the form of Lemon Poppy Seed pancakesJ

I tried out this lemon/poppy seed/ricotta recipes from "1 Cup Awesome" and couldn't be more pleased with the results.  Tangy, creamy (from the ricotta) and I loved the texture of the seeds.  Just lovely!  No blanching required!!J :)

For lunch, I whirled myself up a quick smoothie...
  • 1 cup Unsweetened Vanilla Almond Milk
  • 1 scoop vanilla protein powder
  • 1/2 scoop chia seeds
  • Frozen Pineapple
  • Frozen Strawberries

And finally, I guess I can say my 'chicken aversion' days are coming to a close.  After having Trader Joe's Mandarin Chicken last week, I chose to have my prior nemesis again and went back to one of our very, very favorite dinners (AND HEALTHY SWAPS!)  Buffalo Chicken Fingers with Blue Cheese Cole Slaw...

All you do is cut up the chicken, marinate it in buffalo wing sauce, dredge in (salt & pepper-ed) panko and bake at 375 for about 40 minutes.  I spritzed em with a little extra olive oil before popping them in the oven to give em an extra CRUNCH!

And the chicken is JUSTSOGOOD with the cole slaw!  This time, I lightened up the side dish even MORE by replacing half of the mayo with Fage 0%! (also a good sour cream swap) You couldn't taste the change AT ALL except that it had a more 'clean' taste and less of a rich, mayo flavor.  Either way, you are getting TONS of veggies to go along with the leaannnn chicken 'buffalo wings'....so good!
Super Bowl Sunday is a-comin...why not give this dish a whirl if you're watching you're waistline??

Well, seesh, I can hear the wind howling already!  It always seems to howl EXTRA loud on the mornings I want to run off to Power YogaJ  Mother Nature must just knowJ
