Hey everyone! Hope you had a great (HOPEFULLY) long weekend!! Sorry for the delay...Scott & I are still trying to recover from our absolutely WONDERFUL baby shower that was thrown by our family & friends on Sunday morning. It was an absolutely wonderful, wonderful day! Thanks again everyone who came to celebrate with us and made us feel SOOO unbelievably special (AND SPOILED!!!!!)
Yesterday I let the celebration "continue" a bit by delving into the cookies my Mom, Aunt & Best Friend's Mom made for everyone as favors. Aren't these great????? Who could resist a little festive breakfast?J
Lunch, however, we tried to pull it together just a bitJ We made a little "Kitchen Sink Soup," which pretty much means we threw everything in there that we had on hand!
In the pot, we simmered:
- Chicken Broth
- Carrots
- Celery
- Frozen chopped spinach, defrosted & drained
- Chopped leeks
- Red Beans, drained & rinsed
Both of us felt a little under the weather and knew chicken broth & all those veggies would be the way go for a good and healthy lunch. Try it out the next time you have a blustery afternoon and a fridge full of veggies on your hands. Who knows what flavor concoctions you could come up with!
And finally, to round out our "trying to pull it together after 2 indulgent days," we went with one of my favorite 'healthy swaps': Rice Ball Casserole. All of the flavors of rice balls without the deep fried business..wohooo!
OK, OK...we did also indulge in the LAST of the shower cakeJ How gorgeous is this????
My friend makes absolutely spectacularr & gorgeous cakes (the chocolate chip cake is also TO DIE FOR!!!!) I was completely speechless when I saw this beauty!!! Check her out at Kim's Cakes (and Piece of Cake Decorating) if you're in the area!
And last, but not least, my workout schedule for your "Motivated Tuesday" (it sure jumps around a lot, huh???J)
Monday: 1+ hour Beginners Power Yoga
Wednesday: Skinnygirl workout (50 minute yoga + 12 minute stretch) + 1 round of weights
Thursday: 30 minutes dance + weights (starting to be QUITE a bit more moderate in the 'dance' portionJ hehhehehehehehe)
Friday: 1+ hour Power Yoga Class
Saturday: 1+ hour Gentle Yoga + 1+ hour Power Yoga
Yeah...I was going to 'take it easy' and just do gentle yoga on Saturday morning, but then it just didn't feel like 'enough.' Tack on another extra hour of super, drenching sweat POWER yoga and it could be the reason I woke up Sunday AND Monday feeling like I got hit by a bit of a mack truckJ hehehehehehheehe....
