Phewwwww...well I'm glad the "bad dinner" streak ended at ONE meal last night, as we completely redeemed ourselves with this dinner. It was based on this recipe...However, we tweaked some ingredients and sped up the process QUITE a bit...and ended up with: Chicken with Spinach & Mozzarella over RRosemary polenta...
First I diced up a sweet onion and let them saute in 2 tablespoons of olive oil until they were translucent...
Next, we made a well in the center of the onions and added a half pound of diced chicken. Season with salt, pepper and garlic and allow the chicken to cook through...
Once the chicken was cooked, I mounded a half bag of spinach and let it wilt JUST slightly....
Meanwhile, I brought 3 1/2 cups of water to a boil, and added in 1 cup of polenta. Whisk & stir until it masses and then add in 2 teaspoons of Smart Balance, salt, pepper, a ton of garlic powder and 2 tablespoons of chopped rosemary (YES! Can you believe my rosemary plant is STILL WITH US??? :)
And then if was time to get busy layerin up the dish! First the polenta....
Then the "surprise" ingredient: a few thin shavings of mozzarella cheese, which got nice and melty once it hit the hot polenta....
And finally...the chicken, spinach & onion saute...
This dish literally went from start to finish in just about 20 minutes and was made with everything we already had on hand! Can't beat that! Scott loved the rosemary polenta (oh, how I never thought I'd ever say those words! My Grandmom would be proud:) and I loveeeeed the surprise of the melted cheese:)
Good redemption as far as I'm concerned:) We have another dinner coming almost straight from our "freezer stash" tonight, so we're going with more cheap eats today:) Stay tuned and Happy Wednesday...
