Going old-school...

Morning, all!  Hope you guys had a great weekend.  They just seem to go faster & faster the more summer activities start to pick up, amIright??  We go from an ice cream trip on Friday night to Scott kissing me goodnight on Sunday in a BLINK and a whirlwind of "WTF just happened to the weekend??"J  At least it was a good one, including the first trip to the beach of the season...

...and pizza!  And lots of itJ hahahahhahaa  The first one came courtesy of our grill & this jar of "Many Clove Garlic Cooking Sauce" from Trader Joe's...
A mix of this sauce with some shredded chicken, a (generous!) sprinkle of mozzarella cheese & a dash of fresh thyme from a friend's garden (since I have ZERO talents in gardening...thanks Michelle!!J)... 

...and a quick trip back on the grill to melt the cheese and we had a WINNER! 

And after 'fancy chicken pizza,' we went old-school CLASSIC on Saturday night with our first trip to Bricco Coal-Fired Pizza, in Westmont, NJ.  (Directly next to The Pour House & near-by the beloved Treno).  Starting with their lemon vinaigrette salad... 
How pretty is that shaved Parmesan on top??

OK...veggies = OVER, as it was time for the BIG GUNS of arancini (risotto) balls... 

...which were crunchy on the outside, but OOZZZZINNNNGGG with cheese on the inside.  They were served with a truffle aioli, that was so out of this world I think I could have slathered it on my shoe and made it tastyJ  But the risotto balls sufficed over my sneakers and those two together made for a DYNAMIC duoJ

And then it was PIZZA TIME!  And even though they had a VARIETY of 'fun flavors', old-school TRENTON Tomato Pie was WHERE. IT'S AT! 

And just like any fabulous pie in the tri-state area, Bricco has perfected the CHARRED CRUST... 
Sweet tomato topping, thin-charred coal-fired crust makes Bricco a top contender in the NJ Pizza scene!  Definitely a perfecter of the classics...and I can't wait to go back to check out some of their more modern fare  (short rib pizza, you're next!)

And of course, once dinner wound down, I told the waitress to "bring whatever that dessert was that involved Nutella" that I had spied from the menu early in the evening and VOILA!...

And with all that said, this weekend definetly tipped on the scale on the more 'indulgent' side this weekend...and aside from that salad, not a whole lot of veggies in the mix.  So with that in mind, I plan to kick it up in the veggie department today ANDDDD get myself to CARDIO KICKBOXING this morning to set the right tone for the week.

Oh...and I should mention I haven't taken cardio kickboxing in YEARRRRRRRRRRS, so if you don't hear from me again...you'll know whyJ  GODSPEED, my friendsJ
