Thursday Recap:
8:00am: Coffee & Meta-D (apple juice restored!)
9:30am: Breakfast- Chia Pancakes
12:30pm: Lunch- Leftover Tortellini tomato soup
Nothing like having homemade soup for a quick lunch to get you through the rest of the dayJ
3:00pm: Snack- Small ramekin Peanut Butter Pretzels
5:30pm: Dinner- Pulled Pork & pineapple pizza
So....having some leftover pulled pork in the fridge from this weekends Pulled Pork with Avocado Ranch sandwiches, my originally plan was to have MORE sandwiches...but lately, I've been on a homemade pizza KICK and I'm pretty sure we've had at least one a week since New Years. One of my favorites was from last week where I made a cheese & garlic pizza...
...and then a side salad of arugula, olive oil, a little white balsamic, grated Parmesan cheese & a handful of mini turkey pepperoni...
...and then we combined the 2 by piling the salad on top of the pizza! It's no secret in this house that I LOVEEEEEE to eat salad along with leftover pizza crust (always have), so piling salad across the WHOLE pizza was double the loveJ We were OBSESSED with this thing.
ANYWAY...back to that leftover pulled pork + homemade pizza conundrum, where Scott ended up making it very simple and suggested combining the two. I declared him a GENIUS of the day (which he, shockingly, was ok with) and got busy whipping up the BBQ pulled pork...
...crushed pineapple (I KNOW, but the sweet & salty thing seemed very appealing last night!) ...
...cheddar cheese, red onion & green onion pizza!
Somewhere my Grandmother is cursing me I'm sure, but we really dug this thing! A little sprinkle of garlic powder and extra drizzle of BBQ sauce REALLY put it over the top. SUCH a great way to use up those leftovers!
OH YEAH...but SOMEONE apparently wasn't a fan, as Katie learned a NEW word last night: "EW!" THAT'S RIGHT: EW! Nice endorsement, kid! Although considering it took me nearly 33 years and Scott's convincing to get me to try pineapple pizza, I can't really fault her for her critique. Must be in the genesJ Hahahahahahahaha....
7:00-8:30pm: Hatha Yoga
So my visions of comfort food by the TONS are being thwarted, as our 25+ inch snowstorm has now been reduced to a mere coating. Sigghhhh...NOW HOW AM I GOING TO EAT CARBS IN MASSIVE QUANTITIES AND PRETEND THE CALORIES DON'T COUNT???J hahahahahhahaa.... on the upside, Scott's planned boys night for Saturday night gets to stay in tact, as well as my plans for "Valentines night" with my Mom & KatieJ And we're going to dinner somewhere REALLY fun, which I CAN'T WAIT to share with you on MondayJ Hope you guys have fun plans in the works!
Oh yeah...and my weekend shall also contain a round of potential public humiliation. Yep, I'll be sharing that with you too.
