Certainly qualified...

Wednesday Recap:

8:00am:  Coffee with creamer & hot lemon water
Oh yeah...did I mention Meta-D was part of my new regime?  Well, I also got Scott on the bandwagon and we ALREADY ran out of apple juice and I needed a swap for the dayJ  hahahahahahha

9:30am:  Breakfast- Gingerbread 'chia' pancakes

 11:30am:  Lunch- Southwestern Lettuce Wraps
yep...AM lunchJ  Despite having PANCAKES for breakfast, I was STARVING and craving some PROTEIN yesterday for lunch.  The joy of finding that leftover southwestern taco filling in the fridge was beyond compareJ hahahahaha

2:30pm:  Snack #1 - "Earthy Chai" 
So my BFF who told me about the Tone it Up girls 6 years ago also told me about this tasty drink from them.  It's a mix of:
  • 1 cup almond milk
  • 1/2 tsp cinnamon
  • 1/2 tsp turmeric
  • 1 tablespoon honey
  • 1/4 tsp nutmeg (my addition...cause I LOVE nutmeg!)
They tout turmeric as a superfood, so this is a pretty unique way to get your fill.  I'm IN LOVE with this spiced & sweet drink.  A nice warm & cozy drink on a cold day.  Which ummm...
...yesterday certainly qualifiedJ

4:00pm:  Snack #2-  8 Chocolate covered almonds

5:30-6:30pm:  Body Jam Class
And the ice parted JUST IN TIME to fit this class in for the day (even if my morning yoga was cancelled...tear)  So happy to have a chance to get in there and DANCE!

7:00pm:  Dinner- Tortellini Tomato Soup 
AKA- 'All that is right with the world' soupJ (based on this recipe)  A mix of:
  • 1 diced carrot
  • 1 diced onion
  • 2 minced cloves of garlic
  • 3/4 pound ground turkey
  • 1 jar Bove's Roasted Garlic Sauce (or whatever you have on hand!)
  • 4 cups chicken broth
  • 1 can drained & rinsed white beans
  • 1 cup tortellini
  • 1/2 teaspoon Italian Seasoning
Heat oil over medium heat in a large soup pot.  Add in carrots, garlic, onions and turkey and season with salt & pepper.  Cook until turkey is no longer pink, breaking up as it cooks.

2.- Pour in sauce, chicken broth, beans and seasoning.  Bring to a boil and then add pasta.  Simmer soup for 10 minutes or until the tortellini are cooked.  Check seasoning and serve. 

I never pass up an excuse to have MORE tortellini in my life.  I love them soJ

So thankfully all power lines stayed put yesterday and the roads have cleared of the icy slush.  Now just to await this 'big storm' that is supposed to hit over the weekend, which appears to be fizzling fast from it's originally predicted 20+ inches forecast.  (and I'm sure I'm alone in saying I'm TOTALLY BUMMED!J
