Well, after our successful attempt at "Pizza Potatoes" (they were literally #21 on my Top 20 recipes list!) & the Swiss Chard Stuffed Sweet Potato, it was time to break out my '50 Stuffed Potatoes' booklet from Food Network magazine again...
...and I knew this one was going to be a SURE FIRE HIT in our house: The French Onion Stuffed Potato!
First step, of course, is to bake the potatoes until crispy & scoop out the centers...
...and then it's time to add the fun ingredients! First & foremost is the caramelized onions...
Caramelized onions probably ranks #1 on my "Favorite to eat/HATE to cook" list. I absolutely ADORE them and would eat them DAILY...IF they didn't require you standing over the stove to SLOWLLLLLY watch them brown for 20 minutes. They're certainly not difficult, but you DO have to keep an eye on them and stir them every few minutes. But oh dear God, they are JUST. SO. GOOD!!!!!! (loveeeee em in this panini....which was probably my #22 recipeJ)
Next in the potatoes, was this fun little number from Trader Joe's...
Gruyere alone is very "Swiss tasting," so the cheddar smooooooothes this our perfectly! I LOVE finding quirky cheeses at TJ's. (ironically, my favorite is still the caramelized onion cheddarJ)
Soooo....into the potatoes went:
- 1 & 1/2 caramelized onions
- 1/2 cup of shredded Gruyere Cheddar
- 1 teaspoon fresh thyme, diced (I just happened to have this on hand and liked the addition, but it's an easy skip...or you can use dried thyme)
- About 1/2-3/4 cup beef broth (enough to keep the potatoes moist)
Mash all of the ingredients with the potatoes and refill the shells. Top 'em with more shredded cheese before popping them back into the oven for a few minutes...
Once the cheese is melty & the potatoes are warmed through, you are good to go!
Sooooooooo delicious! Caramelized onions + the cheese just made these babies SOOO flavorful. I sometimes can stick to one 1/2 of a twice baked potato...but this time I scurried back into the kitchen to reclaim the other half before Scott could get a hold of itJ hehehehehe....so good & feeling 'not so flabby shabby' from the lack of butter in this one!
We served up the potatoes with a side of WEEELLL DONE Kale Chips. And while they did have a SLIGHT 'char' taste to them...I think nearly burning them to a crisp is the true secretJ It makes them the MOST "potato chip" likeJ
Hope you guys had a good week getting back into the "swing of things." It seemed like the week went REALLY fast...even Scott said he thought it was only Tuesday last night. Always a good thing when the weekend is looming ever so close!

OMG! We tried a bunch of those and they were all huge hits!! My favorite was the French Onion. The Sloppy Joe was was pretty good too. The Mango Black Bean Sweet Potato was one of my favorites.
