OK...so I don't have anything super fun to show you from last night. After trying to avoid it in these past 72 hours of straight rain & chilly nights, Scott finally put his foot down and declared last night 'salad night.' (How 'unseasonably' of himJ)
In the mix:
- Lettuce blend
- carrots
- craisins
- leftover Monterrey Jack cheese
- scallions
- And my attempt to FALL-ize my meal, a dressing of:
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1/2 tablespoon maple syrup
- 1 teaspoon Dijon mustard
I wasn't excited AT All for salads, but the sweet & tangy dressing made up for it. Fall had returnedJ
Plus I was REALLLLLLLLLLY excited cause I told Scott to toss a baked potato in the oven for me. I needed some OTHER "cozy counterpart" to my rainy dayJ
I really believe if I had to eat one food for the rest of my life: It would be a baked potato. They just never fail to make me ridiculously happyJ

The dreariness in Jersey continues...bringing MORE flooding to our state. Can't we send some of this to Texas where they need it?? Balance it out, universe! Anyway...stay safe out there & I will talk to you guys tomorrow!
