After a day that looked like this...
(OK, OK...so you can't really see the dark clouds & total downpour...but trust me...it's out there!)
...THIS had to happen!
Yes folks, it was time to break out the pumpkins...
...and bring on a cozy bowl of warm soup! Weeeeeeeeeeeeee!
We started our first cozy dish of the season by dicing up:
- 1 sweet onion
- 2 leeks (trimmed & halved)
- 2 shallots
I added all of them to a pot drizzled with olive oil, added some thyme, salt & pepper and allowed the onions to break down for about 15 minutes on medium heat. (once the sweet onions are translucent-it's ready)
Meanwhile, Scott got to work on rollin some mini meatballs to pop in the toaster oven for about 15 minutes....
Once the onions were soft & the meatballs cooked through...we added the meatballs & a box (6 cups) of chicken broth to the pot, brought it to a boil and then allowed it to simmer for about 5 minutes to bring all the flavors together.
And since it was the first soup of the season, I thought I'd get a little crrrraazzzzeeee!
Oh yes, we topped each bowl with some of the fabulously melty fontina cheese and popped them back in the toaster oven to broil for about 10 minutes....
Oooooooooooooooo...yeah!!!!!!
Sweet onions + mini meatballs + gooey cheese = HAPPY!
This dinner was "Cozy Night: 101" and I couldn't have been happier with the results. I wish we were having it again tonight, since it's another dreary and drizzly day in Jersey. Oh well, if this rain means more soup & cooler weather apparel: BRING. IT. ON!
I spent the rest of the night curled up in my "seasonally appropriate" blanket...
...and with a cup of TJ's hot cocoa J

Oh I can't wait for it to cool off a bit. It has been in the high 80's still and we have a tropical depression off the coast. It does make me want warm comfort food though.
