I <3 Trader Joe's!
Santa left these for Scott in his stocking at Christmas, and we finally broke into them last night. O..M..G...SOOOO good! I'm not a huge dark chocolate fan, and even I am thankful that these are individually wrapped so I don't "accidentally" plow through the whole box! :) They taste like coffee, chocolate and caramel all wrapped into little squares! YUM!

Shrimp Newburg
OK, back to cooking:) This dish turned out REALLY good...it was amazing how tasty and creamy the sauce was considering it was only made with 1% milk. A definite keeper in the recipe file:) (sorry the shrimp kind of all blended with the brown rice in the picture! It doesn't look too pretty, but it was pretty tasty!)

"Biggest Losers"
Hi again! I thought this one might be a good time to post this. Especially in light of everyone trying to get healthier in the New Year. I thought I'd post some before and after pictures of me & Scott. To date, I've lost 63 pounds and Scott has lost 60...I'm pretty proud:)
Now that the holidays are over, we're both back on track to reach the big 7-0! I better get my butt in gear because I can't let him beat me!!! (although I'd be super proud if he did!!!)

"Scott Soup"
Here's my husband's own creation....it's our "soup of the house" so to speak, and it's soooooooo good:)
Usually we use whatever we have laying around, but for this version of Scott Soup you:
Usually we use whatever we have laying around, but for this version of Scott Soup you:Crisp 3 strips of turkey bacon in a large pot. Once their browned and crispy, take them out of the pot and crumble in a dish. To the pot add an onion, garlic and some chopped leeks. Let that cook for a few minutes and then a box of chicken broth and 2-3 cubed potatoes. Cook for about 20 minutes, or until the potatoes are cooked. Add the bacon back to the pot along with a small can (those 14 oz.-ers) of diced tomatoes, kidney beans, salt, pepper and thyme and cook until it's warmed through. Tada! Scott Soup! :)
