Easy Weeknight Dinner...

Morning everyone!  Sorry for the delayL  A three day migraine finally struck me OFFICIALLY out-for-the-count yesterday.  Thankfully, after a day in the quiet dark yesterday, I feel A LOT better today. (knock on wood)  So I'm finally able to show you my slow simmering dinner from Tuesday night...
Yes, those memories of the chunky corn chowder from Philadelphia proved too strong for me to ignore, and I decided to whip up my own batch (minus the crab...Scott's not a fan.) 

And I had the even BETTER idea of letting it simmer the day away while I was at work.  Monday night I diced up all the veggies I would need and placed them in the fridge for easy work in the morning...
Into the pot in the AM went:
  • 3 diced potatoes
  • 1/2 diced red pepper
  • 3 leeks
  • 4 diced strips bacon (TJ's fully cooked)
  • 3 diced stalks of celery 
Oh yeah...and a bag of frozen corn!  Can't forget the main star of the show!!!

Next in went 2 cans of creamed soup....
You can use whatever sounds best to you (cream of celery, chicken, etc)...but these were 2 cans I just happened to have on hand and figured they would work togetherJ

After I stirred in the soup, I added enough chicken broth to cover all of the veggies...

Nine hours on low later...

Warm, creamy, hearty and cozy corn & potato chowder!  YUM!!!!
I don't know what I liked better:  the soup or the smell that hit my nose as soon as I walked into the house.!  Who doesn't love an already cooked meal to greet you at the door??  Try this one out ASAP...esp. in these cozy months.

Well, cozy today is NOTL  It's dark & gloomy, but SUPER humid in Jersey.  It's one of those days where it's warm, but still damp enough to reach right to ye ole' bones.  NOT a fan!  Come back, crisp weather!  I TOLD YOU NOT TO LEAVE! J
