So I'm COMPLETELY convinced this baby loves comfort food. (ya know, now that he or she LIKES food at the moment...hahahahahahaJ) Anything that is even REMOTELY warm, cozy & comforting makes me beam from the inside outJ Soups, casseroles...and now apparently: meatballs with egg noodlesJ
I wouldn't have pegged this dish as OVERLY "comfort food"...but it made me HAPPY, so we're just gonna throw it in that category as wellJ
First up were the meatballs (which I adapted from this recipe). We mixed up:
- 1 pound of pork
- 1/2 diced apple
- 1/2 shredded onion
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- salt & pepper
Roll em all up and roast em for about 40 minutes, flipping half way through....
I know, I know...your skeptical about the apple, but just TRUST me on this one!J
When the meatballs were almost finished cooking, I boiled up some fluffy egg noodles...
...and made a quick pan gravy...(made the same as the Steakhouse Sheppard's pie)...
First I melted 2 tablespoons in the saucepan. Next, I whisked in about 1/4 cup flour and let it cook together for 3 minutes. Then I added 2 cups of chicken broth, a couple shakes of Worcestershire sauce and some salt & pepper. Let it all simmer for about 5 minutes and you have a thick, luscious (and SIMPLE!) gravy.
Once everything was cooked, I mixed the noodles with some gravy, topped em with the roasted meatballs & drizzled it all with a little more gravy...
O.M.G....I don't know what it was, but I LOVEEEEEED this dinner. The fluffy noodles were the perfect bed for the slightly sweet, savory, CHEESY and caramelized roased meatballs and I thought the smooooth gravy just pulled it all together. Heaven, I tell ya. Pure. Heaven:J
So ya know what was not so much of heaven?? A new pilates DVD I tried this morning that a friend had lent me...
Don't get me wrong, it wasn't much different from a NORMAL pilates workout...but that was the point: IT WASN'T MUCH DIFFERENT FROM A NORMAL PILATES WORKOUT! hahahahaha...and here I thought I got a reprieve from criss cross & double leg stretch for 9 months. Apparently NOT! The only thing I can think that was skipped was "swimming"...but instead replaced with THESE, which are my most hated pilates nemesisJ...bleh! Oh well, a good workout either way! Alright...I'm outta here. I realized this morning that I only have ONE night of cooking left for 11 days...eeeeeeeeeeee!!!!! Have a good oneJ

That does sound like comfort food. My mom is a big gravy-girl so I've always been a fan too. Maybe she ate a lot of it when she was pregnant with me ;) As for the pilates, best of luck with that position! Balance.. sigh...
