Who COULDN'T use that??

Last night's dinner was one of those simple & light meals that required SOOOO little clean up that you could just lounge around and enjoy your night.J

First up was the chicken, which I coated in fresh chopped rosemary & sea salt before Scott threw it on the grill...

My friend had grew this rosemary and gave it to me...ummmm...a few weeks ago now!  I couldn't believe how GORGEOUS it still looked!
Soooo....OK, my picture of the COOKED chicken have apparently disappeared, but I think you can pretty much guess that it looked like this.  And it tasted just yummyJ

Next up, our "side idea" came from this little beaut from Food Network Magazine this month...
Who COULDN'T use 50 options of potato salad???? hahahahahhahahahaha

We scanned the list and quickly decided on #14:  The Green Goddess...

I packed my little food processor with:
  • 1/2 cup of parsley
  • 1/2 cup of basil
  • salt & pepper
  • 3 scallions
  • 1 teaspoon of sugar
  • a squeeze of lemon juice
  • 3/4 cup mayo
Whirl that up and mix it with some cooked & cooled red potatoes...
MMmmmmmmmmmmmmmm...this was soooo cool, refreshing and with a great flavor from all of the blended herbs!  Don't know about the other 49, but this one was a hit in our houseJ

And of course, our go-to side of the summer:  Fresh, ruby red watermelonJ
So yeah...a perfect meal that doesn't require hours in the kitchen.  Perfect for these super hot days we have comin up here!  Today is just GORGEOUS and wish it would stay like this foreverJ

Alright, well I hope you guys have a great weekend.  I have ZERO clue what we're doing this weekend, short of a cousin's graduation party on Sunday.  We'll see what kind of "trouble" we can get intoJ hahahahahahhaha...

Oh that looks nice and light. My daughter also spotted the Green Goddess potato salad. She has a few highlighted for me to make.
